Since 2024, we at Pit Liquor started a barrel program as a labor of love for our new limited editions. We rotate four barrels with local distilleries and breweries and make about 4 limited editions each year. We have made limited editions with Barrels that previously held Bourbon, Rye, Single Malt, Rum, Gin, Amaro, Mead, and local craft beer. Each barrel release carries small traces of the past into each future limited edition. We tend to age our products in barrels for between 6 months and 1 year.
Why do we age some of our limited editions in barrels? The wood from the barrel removes harsh notes as the charred wood acts like a filter to trap and break down unpleasant compounds over time. The clear alcohol pulls natural sugars, tannins, and color compounds out of the oak wood adding an amber color and notes of vanilla, caramel, and spice. Most importantly, it allows oxygen to interact with the base. As tiny amounts of air pass through the wood the liquid expands and contracts with seasonal temperature changes. This oxygen helps build structure and allow softer fragrances to come to the forefront.
We will not know the exact interaction of the final product until we remove it from the barrel and we can never truly recreate that scent again. With Gold Rush, the bourbon barrel added this rich caramel vanilla note, for Gingham the Rye Ale added an earthy element we could not replicate, or for Rhumspringa the Rum brought out and almost honeysuckle sweetness.
