Ever wonder how our Coconut Lime Deodorant gets that luscious, beachy, fatty, and coconut fragrance. It's not synthetic or a fragrance oil, its us fat washing our neutral spirit in organic Coconut Oil and a little Coconut extract. Every 20 Gallon batch of Coconut Lime uses about 15-30 lbs of organic coconut oil depending on the extraction of the oil. We have been making our own custom coconut spirit for about 2 years now!
First, What is Fat-Washing
Fat-Washing is cocktail technique found in high end bars and restaurants that adds savory flavor to spirits. To Fat-Wash your alcohol, you just add a liquid like coconut oil to a spirit at room temperature. Let it sit for a few hours, then chill everything in the fridge or freezer until the fat solidifies and can easily be skimmed off. The spirit retains the flavors of the fat even after you've done the skimming. Fat-Washing in cocktails was inspired by the techniques of perfumers, who have long used Fat-Washing to extract aromas from tricky compounds such as coconuts.
The Science of Fat-Washing
There are not a whole lot of scientific papers that research the fat-washing of cocktails or perfumes, but the science is pretty clear. An example is to extract the aromatic oils and flavors from a fruit peel. Some of the of the aromatic oils are oil-soluble, others are water-soluble, but Alcohol can diffuse both oil-soluble and water-soluble compounds. By Fat-Washing our spirit in coconut oil we can pickup those aromatic compounds and oils through the coconut itself without added ingredients or synthetics.
Why are we Fat-Washing
Fat-Washing changes the texture of a spirit. We have found that by freezing a fat-washed spirit, it's not possible to strip out 100% of the original organic coconut oil. Freezing the spirit solidifies the fat and makes it easier to strain, but it's very unlikely you'd be able to strain out every bit of the coconut oil. There probably wouldn't be enough coconut oil left to affect calorie counts, but even a small amount of dissolved oils could affect the texture and fragrance on the body.
